Quinoa Fried Rice

This is a quick and easy recipe for fried rice-style quinoa.
Course Side Dish

Ingredients
  

  • 1 cup Quinoa cooked and cold—should be refrigerated overnight
  • 1 carrot diced
  • ¼ cup frozen peas
  • 1 1 egg scrambled
  • 1 TB soy sauce
  • 1 TB vegetable oil 

Instructions
 

  • In a skillet over a medium-high flame, heat the oil.
  • When it starts to smoke, add the quinoa and stir to break up the chunks.

  • Add peas and carrots followed by the eggs. Keep stirring and add soy sauce.
