Parsnip Mash
This parsnip mash is a unique veggie side dish that can be on the table in less than 20 minutes.

- 1 lb parsnips peeled and cut into chunks
- ¼ cup half and half
- 1 TB unsalted butter
- ¼ tsp salt
Place parsnips in a saucepan and fill it with water until the parsnips are just covered.
Bring to a boil over medium heat. Cook until you can pierce the flesh easily with a fork or potato masher, about 15 minutes.
Drain. Return parsnips to the pan. Add butter and half and half. Using a fork or potato masher, mash the parsnips with the milk mixture until you achieve the desired consistency.
