Air fryer vegetable recipes aren’t always easy to find, so I’ve rounded up some of my favorites to share.
Air fryer vegetable recipes, for a long time, entailed tossing Brussels sprouts, broccoli and cauliflower with olive oil and salt to be thrown into an instant vortex and transformed into a healthy side dish. I love my Ninja Foodi for a lot of reasons—roasting vegetables is one of them—but it’s time to mix it up a bit with some new dishes.
Sweet and Spicy Air Fryer Brussels Sprouts by My Forking Life
Brussels sprouts get the sweet treatment with a bit of honey, but the secret ingredient is gochujang. It’s a red chili paste common in Korean cooking—and it’ll make your Brussels sprouts uncommonly good—especially for air fryer veggies.
Air Fryer Broccoli by Chew Out Loud
If you like roasted broccoli, this recipe takes our favorite edible tree tops to a well-seasoned level. With just a bit of onion and garlic powder to make these florets pop and just a touch of olive oil, you can have a healthy accompaniment to any dish in just a few minutes.
Air Fryer Sweet Potato Fries by Lemon Tree Dwelling
These new kitchen gadgets were designed just to make cooking sweet potato fries easier (or regular French fries). That’s slight hyperbole, but they do come out pretty fast.
Air Fryer Green Bean Fries by Healthy Little Peach
This recipe does a pretty good job of simulating green bean fries. Healthy Little Peach keeps them healthy with an almond flour and nutritional yeast coating (that makes these guys crunchy) before “frying” them.
Air Fryer Green Beans by Vegetarian Mamma
If you’re looking for green beans that feel a little less fried, Vegetarian Mamma came up with this recipe for traditional beans to serve with chicken or beef. It’s super simple and can be on the table in ten minutes.
Air Fryer Bacon-Wrapped Asparagus by Salty Side Dish
If you thought owning this gadget means you’re giving up on indulgent food, you’re wrong. But these bacon-wrapped asparagus spears are so right—all you need is bacon and asparagus. The genius in this recipe is that the bacon pieces are sliced in half before being wrapped around your spears to keep you from getting overwhelmed by bacon (as if! Just kidding. I didn’t really make a 1990s romcom reference.)
Air Fryer Spicy Avocado Fries by The Food Hussy
Deep-fried avocado wedges aren’t just for the state fair! No are they actually fried, but The Food Hussy replicates the fair favorite by dipping the avo slices in eggs mixed with Frank’s Red Hot sauce and coating them with a mixture of panko breadcrumbs and Hooters Wings coating.
Air Fryer Blooming Onion by Boomhaven Farms
Now is the time to try your hand at a homemade bloomin’ onion! But this recipe circumvents the spatter of hot oil and the headache of a cleanup.
Air Fryer Fried Pickles by The Creative Bite
Another fair fave comes together with just panko breadcrumbs, Parmesan cheese, eggs and, of course, extra large pickles. The trick is getting the pickle chips as dry as possible so the egg sticks to them and the breadcrumbs have something to cling to. They’re ready to serve with a ranch dipping sauce in just about 10 minutes.
Air Fryer Radishes by Crumb Top Baking
Crump Top Baking takes the bite out of radishes by roasting them in the air fryer. I have to say, I love to roast vegetables but it has never occurred to me to roast radishes so I’m going to file this one under “most unique.”
Air Fryer Eggplant Fries by Return to the Kitchen
There are loads of eggplant Parmesan recipes, so I thought I’d throw this one in to throw you off! These easy bar snacking-sticks call for all the usual suspects (breadcrumbs, eggs, seasoning) along with cooking spray to give your fries that fried flavor you crave.
Air Fryer Eggplant by This Healthy Kitchen
If you didn’t have fries in mind in your hunt for eggplant recipes, this is a healthy alternative to the fries out there. This recipe doesn’t call for any breading or oil, it relies on vegetable broth and spices to make it delicious—but don’t expect a crispy texture.
Air Fryer Zucchini and Yellow Squash by Air Fryer Fanatics
As you might know, the zucchini chips from your favorite bar and grill don’t travel very well. But that’s ok! Even during a pandemic, you can get those crispy squash chips with the help of this recipe and an air fryer.
Air Fryer Zucchini by Cook at Home Mom
And for a breading-free air fryer squash, Cook at Home Mom cuts her zuke into chunks and tosses them with onion and seasoning before “frying.” It’s the low-carb, easy recipe you’ll want to serve multiple times a week.
Air Fryer Cauliflower by Little Sunny Kitchen
This easy-peasy recipes reigns in all the flavor of cauliflower, spins it with spices and drops it in a hot tornado to get one of my favorite cruciferous vegetables to a golden brown—no oil or cooking spray required.
